How long can you leave cream cheese frosting unrefrigerated?

I am doing a 40th birthday cake for my sister-in-law and one of the layers is a red velvet with the cream cheese frosting covered in fondant.

How long can you leave cream cheese frosting unrefrigerated? Is it 2 hours or less? We are unsure her refridgerator will be able to store the cake until serving time. Please help. The party is Saturday 9/4/2010.

I normally keep it refrigerator until 30 mins before serving if it is an average size cake. This is a 3 tier cake with only the middle cake being covered in the cream cheese frosting.

Please help...

Depends on your recipe and the ratio of sugar to cream cheese. The safe answer is no longer than 4 hours unrefrigerated total - including decorating time and display time.

The cake would be covered in fondant and it is a simple design and not much detail. So decorating time would be maybe an hour. then it will be refigerated up until I take it to the party. The cream cheese frosting recipe that i use has 1 pack of 8oz cream cheese and 4cups of powder sugar.

Do you still think 4 hours would be ok with that ratio?
