Hi

I am currently costing kitchen equipment for my business plan and I'm not sure how big I need to go for my mixers. I know my Kenwood is way too small and for 12" cakes I have to mix 3 lots of batter, but I'm thinking is there such thing as too big a mixer (I've been looking at hobarts) and are two or three smaller ones better?

It all depends on how much you want to mix at one time. I don't have an answer but maybe with more details someone else can come up with a suggestion.
