I'd like some advice please
I'm very new to baking, and have only really used sponge cakes- mostly I like to decorate them.
But I am working on my wedding cake, and a sponge cake won't last very long- I'd like to decorate it well in advance- Like a month.
I have two tiers that I'm not sure what to do with I'd like them to be different cakes- to feed 80 people.
So I'm thinking one 30 cm (12 inch) cake and one 35 cm (14 inch) cake should be enough? This will be after a dinner and lots of snacks and there's a desert of chocolate mousse as well.
for the 30 cm cake i am thinking a fruit cake, I am sure this can stand out for a month no problem? (it's also winter here I'm in South Africa).
does anyone have a recipe for enough for that size?
for the 35 cm cake... what are the options? What other cakes can keep well? I would like to decorate it at least a week in advance and have it sitting out from that time (it's winter so room temperature is fairly cool)
I'd like to cover the cakes with royal icing so I am guessing this involves a layer of marzipan? Again, what are the options please?
There is so much information out there that I've been swamped with trying to find what I'm looking for!

Hi Amy and welcome to CC. I can't help with types of cakes that keep as I only make cakes that will last a few days. As far as sizes go, I am not sure 30 and 35 cm would look ok stacked. You really need a smaller cake on top. Also covering cakes with RI is also something I don't do, wedding cakes are usually covered in fondant here in the US. Good luck.
