Has anyone tried DH red velvet cake? If so, how was it? I want to make some cupcakes for a party and wanted something quick. I use DH white and love it but make red velvet from scratch. Thanks for any info..........

i too make red velvet from scratch- i consider that my southern red velvet cake. and make DH (doctored) i call that my nothern red velvet cake.
ive never had any complaints on either of them. there is definately a slight taste differnce.
ive also made white chocolate cream cheese frosting. i definately like it better than regular cream cheese. i think white chocolate gnaache goes better with red velvet than cream cheese.

Straight from the box works for me. Since I'm not the neatest cook, I wind up looking like someone stabbed me and I bled all over my white tile counter. LOL icon_biggrin.gif

This chocolate ganache recipe requires twice the amount when made with white chocolate:

My doctored recipe is a bit more dense with a tighter crumb.

I use it for both layer cakes and cupcakes and it will hold up to fondant, if needed.

I love the white chocolate cream cheese on it.

BlakesCakes,

Will you share how you doctor your red Velvet Cake as I prefer a more dense cake with a tighter crumb also.

Thanks

Sorry - I guess I can't read. Thanks for bringing that to my attention. I keep shying away from this cake beause I didn't want to make a cake that was too "soft" and not hold up to the weight of the fondant.

I use this recipe and it is the greatest that I've ever had and I use this for every cream cheese recipe that I have. I love the white choc cream cheese icing it's awesome!

I use:
2 pkgs cream cheese
2 sticks butter
1 pkg white candy melts or white choc to equivalent
2 tbsp lemon juice (help with sweetness)
3-4 cups powdered sugar to taste

Melt the white choc and mix the cream cheese and butter while waiting, then add in the choc after it has cooled a bit. Add lemon juice and then add the powdered sugar to your liking. I like the taste of cream cheese more than the sugar so sometimes I put just the 3 cups in for more cream cheese taste but add the 4 cups when making it for others. I hope you guys enjoy. Let me know if you try it!

I also make red velvet from scratch, I'm a southerner and was raised to never make red velvet from a box, lol. So no help there. But enjoy the cream cheese frosting it will make anything taste good, even on choc cake.
