Help!!! 750 Cupcakes???

OMG!! i just got an order for 750 cupcakes for a fundraiser!!! i dont know where to start!! how far in advance can i bake these?? how do i store them in the freezer?? thawing out?? (ie how long??) i feel soo overwhelmed, but its for a good cause, so want to tackle this project!! also, how much would i charge for them?? thanks in advance for all info icon_surprised.gif

Take a deep breath and let's break this down.

Are you baking in a home oven or a commercial oven? Assuming you can get two of the 12-cavity pans in a home oven at one time, that's 24 cupcakes per batch. That's 32 baking batches. At 20 minutes per batch, that's 640 minutes = 10.7 hours baking time. Just oven time.

If you have access to a commercial oven (yours, a church, etc) .... I can get 8 pans (96) in at one time so that's 8 baking batches x 20 minutes = 160 minutes 2.7 baking hours.

Do you have a KA, multiple KA's, or a bigger comm'l mixer?

I saw a thread recently that suggested baking/freezing ahead of time, then placing the cupcakes in the big boxes, THEN icing them while they're in the boxes. Less handling and as soon as they're iced, pop on a lid and set aside. Cupcakes will thaw in minutes.

i'm one of the ones that posted on having done a fairly large cupcake order (200...seems small now icon_smile.gif). bake them, freeze them, put in boxes, ice them and pop on lid! i agree with indydebi in finding a commercial kitchen you can use! i don't know what you should charge since it's for a fundraiser??? i usually donate for an exchange of advertising somehow with those sorts of things. you should definitely get paid for materials tho!

Thanks indy!! brilliant as always!! im super excited for doing these!!! ill be doing them in a commercial kitchen so that will save me baking time!! as for the KA's i will have to beg/borrow/steal!!! lol

Oh that is great! Does the kitchen have a big mixer?

My 6qt KA will hold 3 mixes easily = 72 cupdakes. It might hold 4 but I haven't tried it.
