It looks like fondant to me but it also looks like it was sponge painted with gold coloring.

Or it could be buttercream with crushed graham crackers - That is what a friend of mine did on her castle/sand cake
She also added sugar crystals to give it sparkle

Maybe it's fondant that was brushed with piping gel or something to make it tacky, then sanding sugar was adhered.
Its says that the fondant was marbleized. White and dark chocolate. I dont know.
I also need to make this for 125 and wiltons chart is short if I make it 12/10/8/ and 6 anniversary tier.
UGGGHHH.
I wonder if anyone has any ideas on what to use for sand.. graham crackers, brown sugar, what else

You could easily cover your cake with a sand-colored fondant, then sponge with a darker sand-colored buttercream or RI. It would give it the look as well as a fantastic texture, and you could also mix in pearl/luster dust with the bc/ri OR sprinkle with edible glitter after to give it the slight 'sparkle' that sand has.
It's sooo pretty. Since you can do it with either fondant or buttercream, I would ask the person you're making it for what they prefer.
The photo description is really setting me off. I am super confused. I want to achieve the look that she wants. I am ironically not worried about the stacking or making the cakes I am worried about the look.
The fact is she has this cake in mind and some people think they need that exact look. I can understand it but the original not being my own cake I don't know that I can duplicate it exactly.
I do like the idea of using fondant and sponging on buttercreme to look like sand!
I am going to try and do some practice rounds this weekend after I finish my 4th of July cakes!! ( I have 2 to finish)
Does anyone agree that 12/10/8 will be large enough for 125?

According to Wilton, 12/10/8 will only afford you 118 servings-- 7 short.
However if you change your sizes to 14/10/6, this will afford a cake with enough (again according to Wilton) wedding-size servings for 128-- only three extra.
If you wanted to still do a top anniversary tier you could do just a 4" little thing.
And you never will be able to replicate something 'tit for tat'. I never say exactly, I say: in the style of, or inspired by. Lighting, shadows, different brands of coloring, crackers....it all adds up to make big differences. What you may produce may be downright gorgeous, and this is not a hard cake to create, by any means, but don't ever committ to "exactly, dead on, picture perfect copying." It's a setup for a possible future disaster.
Did she want it exactly like the picture? The picture is a four tier cake, looks like a 6/8/10/12. But if she wants it for only 125 guest, I would make a 6/10/14. I had already suggested making it fondant with sponging gold over it. I believe it's that gold powder mixed with a clear liquor that they used, not gold buttercream. Well the wedding is August 1st!! and I don't have a definite response from her yet!! I told her that I havent made a cake that size before and that it WOULD NOT look like the photo exactly. She has seen many of the cakes that I have been making recently so she knows my skill level. The catch is where we are there isnt really anyone to make anything like this!
We will see what happens!

You worry to much ! There is so much time until aug 1, make a small coffee cake and cover it half with fondant half with buttercream, sprinkle buttercream with graham crumbs and brown sugar, sponge fondant with gold or smear piping gel an then crumbs and sugar again. While you are playing you may get some better ideas ... Then invite your friend over and ask her to choose the look .... Have fun !
I'm seeing a 3 tier cake with a castle topper.
14, 10, 6....it appears to have a larger gap between the tiers than would a 12,10,8 unless the tiers are even up the back(I can't tell)
do ya notice how the turret in the rear on the right at the top is suspended...like connect to the castle but in the air...I'd say it was either a topper or a gumpaste model....

Hi...not sure if you still need help with that cake, but I found the recipe and directions for that exact cake by those that made it. Here is the link...I hope it works for you. My sister just asked me to also make here a sand castle themed wedding cake in December...let me know if you have trouble with this one...please.

Well after a bit of failed communications and me taking a much needed vacation... someone else is doing the cake. Which is fine for me. I hope the bride gets what she wants!
