yes their website is awful to use...but i can say their store is great as in has everything you need and more. they've recently extended it and you can spend a lot of time and money in there...one tip though, if you do have anything specific in mind, try and find it on their website and see wat price they have it listed for and quote that to them if you find it more expensive in store, as they will probably offer you the net price.

Has anyone ever displayed cupcakes on a cake board? I have done a couple of round cakes surrounded by cupcakes on big round boards, but not just cupcakes, I would normally use a stand, but have an order for a birthday cake for next month & the lady did want a heart shaped cake with flowers (boring!) but has since seen my cupcakes, and now wants cupcakes, thing is they are taking the cake out to a restaurant, and plan to bring it out as a surprise, so no good using a stand!
What do you think?

you could offer her a disposable cupcake stand, which come flat packed and really easy to pop up. a couple of months ago i bought a gorgeous one from Primark of all places, that would probably hold 12 or a bit more cupcakes, and is still flat in its bag, so they could easily hand it over to the staff with the box of cupcakes and let them bring it out (carefully!). I could also imagine a fondant covered cake board with ribbon border and cupcakes on top, this would allow you to have a little birthday message on the actual board if you dont have space on the cupcakes, just figure out which size board will fit everything in.

I did this just today for a girl who came in to the bakery. 12 cupcakes fit perfectly on a 10" round (3 in the middle, rest around the edge). I glued them on with a bit of royal icing, and put a ribbon around the whole lot tied in a bow on the front. If I'd have had some notice, I would have covered the board in fondant (or at least some kind of wrapping paper)...the silver board didn't do the cuppies any justice!

Hi everyone
i am a newbie in the midlands, i have read some of the thread but not all.

My question is has anyone used 'sweet silk' fondant from sweet success in nottignham? and if so how did you find it.

i am finding the renshaw fondant very soft and it seams to tear very easily.

any tips/hints welcome.

The one I have that I showed you before some of the shells are quite big - it has a seahorse and starfish that are pretty big. I think you'd need a middle of the road set depending on what you making the shells for? on another subject has anyone used the Wilton wonder mold and know what size cake mix it takes - i.e. 8" round or 9" round. about to bake one and not sure on size mix to use? thank u x

The second ones look really good and they have all the criteria so I would go for those. yeah some of the alphabet molds are tiny I've seen them in a shop. If you have a big cake to decorate you could be making sea shells all day with that one lol icon_smile.gif

Hi all!

Looking for a wee bit of advice on starting up my home bakery properly and legally. So far it's just been doing cakes for friends and family but keep getting asked for other people and I'm a bit wary until everything is sorted.

So far I've had an environmental health inspection but unsure of what else I need, whether it's a course I need and for insurance/tax purposes too.

You need public liabilty insurance, got mine from simplybusiness.co.uk for a good price.

You can print out a form off the inland revenue to register as self employed so you can pay tax on your earnings.
You'll also need to inform their dept who deals with the Child tax credit.

Im surprised the environmental health didnt tell you to do a food hygiene course' I did mine online and they were happy with my certificate.

This is the doll pan, right? I have used it on a few occasions, it takes 6 cups of batter, which for me is an 8" round mix - 330g each butter, sugar, flour and 5 eggs. I recall with that amount of mixture it comes out about 2cm shy of the top of the mold. So if you want it to get right to the top, maybe do 400g of each and 6 eggs?? Having said that, by the time you have split it into layers a few times to fill it with something, its usually tall enough. I sell it as 20 portions.

The woman at the cake shop where I rented the wondermold pan from said it would need a 6 egg mix, I did my 6 egg recipe and I'm sure I had enough for a few cupcakes too (maybe it's the extra ingredients like sour cream that bump it up)

Spent the past coule weeks slowly making my way through this thread, I think near page 80 now icon_biggrin.gif
Anyway, making a cake for the boyfriend's 21st on the 4th of July and want to make the decorations in advance. Was thinking about fondant and just keeping it in a cardboard box until the day but haven't thought of candy clay yet. All the recipes seem to be the US versions with the melts and the corn syrup and was wondering if anyone had a UK friendly version? Would it still be edible say if I made them on Friday?
Also to save time I saw a youtube video about airdrying buttercream flowers on wax paper at room temp then after 12/24 hours would be sturdy enough to move with hands; has anyone tried this before?
Sorry for all the questions, trying to make this cake perfect so will no doubt be asking loads more ahh!

Thanks that's really appreciated went with the advice I did for a 9" just so it was a bit more to the top good job I did as a bit of sponge has split in full circle round the top (thin pan that wonder mold!) so will give me plenty to level. Wondering a) how many splits to do and b) how do you get the sugarpaste to stick to the doll just a bit of water do or piping gel better? They've now said they want a princess "fairy" style so thinking ice the whole base first then do a little wrap for the skirt and her top. Looks such a simple cake but they always the worst! good to do something new though although have to say these aren't my fave style of cake lol hopefully it be pretty though icon_wink.gif

Thank you Lisa went with the advice from both of you and turned out super. Yeah they add all sorts in the US don't they - pudding mix etc. My friend in NY sent me a recipe book for "All American" recipes. I tried a few - fair disaster I have to say ha icon_biggrin.gif

Does anyone know a good place to get 24-cup pans for cupcakes / muffins? I've tried US sites and for two they are approx. $40 - but $70 shipping!!! From Amazon UK they are costing £60 + £20 shipping.

Anyway, making a cake for the boyfriend's 21st on the 4th of July and want to make the decorations in advance. what kind of decorations are you making? to make life easier sugar paste is always the best way to go, can make in advance. HTH

I feel your pain - it's roasting and how awful we are complaining but it's tough when working. So sad that I was glad to hear a little rain early hours of this morning lol icon_biggrin.gif

Hi sanmarco not sure on this one as I can't see sizes of the actual finished product? or am I just not looking properly lol? The one I have that I showed you before some of the shells are quite big - it has a seahorse and starfish that are pretty big. I think you'd need a middle of the road set depending on what you making the shells for? Design-a-cake have some diamond paste molds in shells - 3 diff sizes, extra large, large and small maybe worth a look at their site? http://www.design-a-cake.co.uk/

then read the description and the whole mould is only 7.5 cms, so they must be tiny!

I am from Sittingbourne and probably the only good thing about it is that I am a ten minute walk from a cake decorating shop.
The weather is playing havoc with sugarpaste. I did a giant cupcake Sunday and the icing was like melting wax. I also have 2 more cakes coming up this weekend and I have to do some ballet slippers on one of them and I am hoping that humidity won't mess with them.
For doll cakes I have made loads and until I got my tiffin pan from a charity shop I always used a 6 inch round and a pudding bowl. Do a little carving to taper in at the top to lose the unatural roundness that some doll cakes have. I usually use a long knife to carve out a hole in the centre, wrap the dolls legs in cling film and shove in whole. Wrap her hair up in clingfilm to keep out of the way and use a little water to stick the bodice on. The doll pan comes up too short so I would yank the legs off for that . They are easy and probably the most popular cakes I have made i even had to do one for my daughters 18 as I wasn't confident to do them when she was little and she felt as though she had been deprived loL! She is a bit of a Barbie girl. I made 1 for my friends daughter and the staff at the soft play centre told me they did not want to cut it as it was too pretty.Suprised I could get my head out of the door LOL!
My favourite by far is the mannequin bridal one in my pics It was suprisingly easy but so effective.

Thank you Rosiepan - oh you are not too far from me, well kind of I'm just outside Dover. I am dreading these cakes. They are iced apart from the doll and I had bubbles here there and everywhere! I can't do the fridge job like the americans do. I did that once what a disaster i don't know how they do it! Your bridal cake is stunning. Did you do the skirt as just sugar paste or mix with a little flower paste to keep it's shape? Thank you for the tips on doing the doll. I'm using the basic doll pick one for this one but I have a rapunzel one coming up and was wondering on the legs I don't want to snap her in half at that price! Will put another tier of sponge underneath the wonder mold cake. Thank you icon_smile.gif
