Hello everyone, I was wondering if anyone would help me with this,please...
In May I'm making a wedding cake but the bride is diabetic and has asked me if I could make the cake or at least one of the tiers just for her. She's told me that she has tasted/bought cakes from others but they used splenda and the icing was just too sweet that would end up giving her a sugar rush. So this is what I'm looking for, a cake & icing recpie that doesn't use splenda? I have a recepie but it calls for splenda so thats out of the question. I'm not diabetic so I don't know how it would feel like to get an attack, so I offered to make her a taste (5inch) cake once I found the right recepie; I don't want this bride to end up at the hospital on the most happiest/important day of her life. At least she'll be able to tell me if the cake was ok or not...

I think if you used a whipped type of icing like Rich's Bettercreme it wouldn't make the cake seem so overly sweet! I'm not sure how much sugar is in bettercreme but it certainly doesn't taste like much.
