Your Favorite Flavor Combinations Please
Baking By Bellatheball Updated 25 Aug 2009 , 4:10pm by MacsMom
I started to read that cupcake megathread when I realized, 92 pages in to it, that I'm only 1/5 the way through. So I thought we could cut to the chase and put our favorite flavor combos in one thread. Anyone game?
I made two this weekend that I loved (and I'm hypercritical of my own baking).
Chocolate cupcakes filled with peanutbutter filling, topped with chocolate buttercream
Chocolate cake - Darn Good Chocolate Cake from Cake Mix Doctor
Peanutbutter filling (I never measure for my own creations):
about 1 cup peanutbutter (never measure but it's enough that you can still smell it when it's beat with the butter)
about 4 Tblspns room temp butter
1 tsp vanilla
about 3-4 cups powdered sugar
enough milk or water to make it the consistency you want.
Cream the first two, add the vanilla and slowly add ps and liquid. Beat to death until very fluffy. I used a thinner consistency for the filling. You can add less liquid for a buttercream that holds its shape.
Chocolate Buttercream:
8 Tblspns butter
1/2 c cocoa
3 c powdered sugar
1 tsp vanilla
enough milk or water to make the consistency you want.
Peanutbutter and Jelly Cupcakes
Same Darn Good Chocolate Cake cupcakes, filled with strawberry filling (from a sleeve, could use preserves), topped with thicker peanutbutter buttercream from above.
Ok, who is next?
Coconut cream cake with milk chocolate ganache, or white chocolate cake with chocolate chips.
Pumpkin spice cake is always a favorite.
One of my favs is pumpkin spice with chocolate chips and butterrum icing.
or how about banana cake with chocolate fudge filling and butterrum icing. MMMMMMMMMMM
Here's a link to a thread that was started already for the same topic. Some really good ideas in there.
I like vanilla cake with cheesecake icing and cherry (or cherry flavored icing) filling.

The Darned Good Chocolate Cake from Cake Mix Doctor is EXCELLENT! I'll definitely try it with the peanut butter filling.
Some of my faves:
Coconut cupcake with lemon curd filling - vanilla buttercream covered with shredded coconut on top.
Pumpkin cupcakes with cream cheese filling and cream cheese icing. With a cup of hot apple cider - YUM!
Chocolate Bourbon cupcakes either plain or with a light blob of butter on the top! Forget the icing - you don't need it with these!!
JR
One of my absolute favorites is
pineapple cake or coconut cake(pineapple my fave)
pineapple filling from sleeve
pina colada flavored buttercream
Sometimes when I eat this I like to close my eyes with each bite and pretend I'm on some tropical island somewhere. Then I hear my kids fussing and quickly snap back into reality. LOL
One can of crushed pineapple and one box of angel food cake mix. Open both, pour into a bowl and mix (dont add anything else!). Then bake as directed on the box! Pine-Angel Cake has been a favorite of lots of my friends and family, can even make a glaze of some sort and drizzle over the top if desired.
I am really liking a buttercream that I found online somewhere and copied down, but then haven't been able to find it again to credit the author. (If anyone recognizes it, I'd love to hear so I can credit it appropriately). My favorite cupcake has been a chocolate cupcake, this buttercream as filling, and a whipped ganache topping.
Buttercream
Blend together:
1 stick butter
1 1/4 c powdered sugar
flavoring to taste (I've used from 1/2-1 tsp vanilla)
Add:
3/4 c + 2 TB chilled heavy cream
Whip, then blend with paddle for 12-15 minutes or til of whipped/frosting consistency.
In between it'll whip, curdle, and then finally blend back together. It's tough to do more than a double batch of this because the butter splooshes the liquid around. A double batch is enough to frost and fill 2 9" cakes (this is my estimate from how much I've used, I don't remember the recipe saying).
a couple of favorites
Banana cake with chocolate butter cream
vanilla cake with raspberry filling and cream cheese icing.
strawberry cake with lemon buttercream
Orange Dreamsicle cuppies with a chocolate truffle filling...
or vice-versa
Chocolate Decadent cuppies with orange "fluff" filling (it's like a Twinkie filling)
