I Need Muffin Recipes

I wanted to make muffins for my DH and kids in the morning. They are sick of cereal, and it seems like there is no time in the morning for a "good" breakfast. Muffins sound perfect for us because they can just grab them and go thumbs_up.gif . I tried a chocolate chip muffin recipe today, they tasted good, but looked ugly. I want the pretty dome top and mine came out like scones. I'm thinking I over mixed them (I was trying really hard not to). So if anyone has recipes or tips on making them I would greatly appreciate it. TIA, Kristen

Well, recipes abound all over the internet, so I am sure you will find some you love. There was a thread recently here that talked about muffins too, so I bet if you did a search you would find it (and others probably)

I tend to use a basic recipe for most muffins and just add to them as I like. Dried fruits, nuts, crushed cereals, grains, seeds, flax, etc.

For muffins, always be sure not to overmix. Don't have the oven too hot, that will cause them not to dome, but get tougher and pointy.

Be sure there is no grease on the pan rims, only IN the cups, or use papers. Greasing only the very bottom is best to let them expand.

Unlike cupcakes that you know will rise properly and expand more, be sure to really fill the cups, almost full is what I do.

If your muffin tops were flat then the oven temp was too low. Most of my muffins get baked at 375-425.

I love keeping some tasty muffins on hand for my DH to take to work too, yum!
