I am searching for a good fool-proof universal muffin recipe. I want a basic muffin recipe that I can add things to change the flavor. Like make them blueberry or chocolate chip, etc. Hope that made sense. Thanks in advance. Diane

Actually, almost any blueberry muffin recipe is ideal for just that sort of thing. They tend to be fluffy and not too sweet, yet firm enough to hold up to things you may add in, and you can usually reduce the liquid when adding wetter mix-ins and fruits, or add more when making them chocolate. An extra egg yolk will make the batter more yellow, and you can do it all egg white for a whiter muffin.

My 1970's era Joy Of Cooking has the base muffin recipe I use all the time. It has held up really well to all sorts of changes for me, though I don't use it as my exclusive muffin recipe.
