Hi all icon_smile.gif

I'm making cupcakes for a baby shower and I want to make vanilla cupcakes. I'm going between the Magnolia Bakery recipe and the WBH recipe. Can anyone give me an opinion on which is better? Or any other scratch vanilla cupcake recipe suggestions? Althought I'd LOVE to taste test a whole bunch, I figured I'd see if anyone had a preference. Thanks for any input you can offer icon_smile.gif

I haven't made the WBH vanilla cake, but I didn't care for the Magnolia one.. it was a bit bland. Nice texture though. I'd double the salt and at least double the vanilla if I ever made it again.

have to agree with jkalman. i haven't tried WBH yet since my book has 't arrived yet but the Magnolia one was underwhelming for me.

Would you like to try Billy Reece's vanilla cupcakes? i've heard a lot of good things about it.

Thanks for the info and the link! FYI, I did make the WBH cupcakes last night. I tripled the recipe and then frosted them with the Buttercream Dream. They were a big hit with my co-workers and I think they turned out really yummy. They were a little dense (I think I overbaked a touch) but very moist and tasty. I'll try the Billy Reece ones next!

Here's the recipe: ( tripled it to get 3 doz cupcakes). Enjoy!

Line a 12 cup cupcake pan with cupcake liners. Preheat oven to 350F.

Sift into mixing bowl:
1 3/4 cup + 2 TBS cake flour
3/4 tsp salt

Add and mix to combine:
1 cup sugar

Add
1/2 cup + 2 1/2 tsp warmed milk (110F)
2 large eggs
4 ozs very soft unsalted butter
1/2 tsp pure vanilla extract

Beat at low speed with wire whisk attachment for 1 minute. Scrape down the bowl. Raise the speed to med-low and beat for 1 1/2 min.

Add 1 1/2 tsp baking powder. Mix at low speed for 30 sec. Fill each cupcake liner 3/4 full and Bake 18-20 min or until golden. The top should spring back when lightly pressed.

Yields 12 cupcakes
