I have been baking for years now, and I never had a problem. But for the past 10 days, everytime I bake a cake it looks fine when it's done but as soon as I take it out of the oven it sinks!!! I've been using the same oven for the past year, these receipes are recipes I trust and I am using the same ingredients.
I have to complete an order for this weekend and I don't think I will be able to fulfill it.

Hi, that's strange....I was going to ask you if your baking powder/soda is old, but since you're a regular baker that's probably not the case. Although, maybe it was old when you bought it.
Do you use heat cores when you bake the larger cakes? Maybe that would help bake them more evenly and prevent sinking.
Another thing to check is the temperature of your oven with a thermometer. Maybe one of the heating coils is ready to poop out. That happened to me once and my oven was only 3 yrs. old.

Usually when a cake sinks it means it is undercooked. Might need to check the oven out. Be sure to test the cakes for doneness before you take them out of the oven.
