I know I saw a thread about this yesterday and now I can't find it. How long can a french buttercream iced cake covered in fondant be left out? I usually ice and decorate them on Friday for delivery on Saturday, but I have to ice and cover them today so I can start my decorating tonight. I usually keep them ion my studion in the dark with the a/c very low. Any thoughts?

I think they would be fine kept in a very cool/AC room. I use a french buttercream, and when I had so many cakes and not enough 'frig room my only option was to crank up the AC in the bakery! thumbs_up.gif
