My dh insists that there has to be a way to tuck the fondant under the edges opposed to cutting it. Does anyone do this? It would make life so much easier! TIA

You could if you cover a cake and tuck edges with a board the exact same size and then after molding it underneath put it on another board so the fondant does not touch any other surface. See my avatar.
