Fillings for Fondant cake??

Everything I have read so far says not to refrigerate fondant after it is on the cake and decorated. Is this correct? And if so then what type of filling do you use in a fondant cake? I'm making a 3 tier wedding cake for Aug 27th. I wanted to make the cakes ahead and freeze them and then I will take them out on the 25th to thaw and cover them with Fondant and decorate them maybe the night of 25th and on the 26th. My husband is the best man and both my kids are in the wedding party as flower girl and ring boy so I'm going to have other distractions as well.

I use pastry fillings bought from a cake supply store. They can be frozen, and don't require refrigeration.... plus, they are really yummy!

The choc cake i made was put in the fridge using mmf overnight, it was ok but i put it in the box and covered with plastic wrap.

Buttercream or ganache
It's rare that I use any other filling.
