Apple Crisp Idea... Hope It Helps You As Much As Me!

So i made a trip to the apple orchard/pumpkin farm over the weekend and (as usual) bought way too many apples! i made a pie today, and my BFs brother heard us talking about it.... he asked if i'd make him some apple crisp since i had so many apples, and of course i said yes. To me, apple crisp is something i've always had to spoon out of the pan. Him and his family already have a few of my cake pans in their kitchen somewhere, so i decided i did not want to leave another pan at their house..lol. i decided to doctor up my usual recipe to make it more 'portable' so i added some extra flour to half the crumbly-topping mixture, and used that half for the bottom layer. in case it didnt work, i baked it in a cupcake pan in liners. Oh my goodness! it was unbelievable and when i 'sampled' my first one, i peeled the liner back and it was all in one piece! next time, i will make it in a 9'x13' and i'm confident i will be able to cut it into bars to plate!

when you finish the crumble mixture and divide it in half, add about a half cup of flour and mix it again. use this as the bottom layer and TADA... perfect apple crisp bars or mini cakes!
also, for even more crunch on top, i brushed my apple pie glaze over the tops, sprinkled more brown sugar, and popped them back in the oven for about 3 minutes. (i dilute a little corn syrup with warm water and melted butter, with a tiny splash of vanilla and brush it on top of my baked pies with a pastry brush. then sprinkle white sugar over that for to make my apple pie 'sparkly'...lol)

leftovers? these were gone before the football game was over! i only got the one i sampled! wish i could have shared...
and i have now set a precedent.... these are expected to be on the table at every packer game... what did i get myself into!? at least they're easy! and my BFs 5 yr old nephew said "auntie nikki.... can i have this for my birthday cake?" lol.... "no gage.... i can't *'decorate'* these!" (or could i....hmmmm.....maybe little caramel BC stars.... )
