Freezing Cakes & Fbct??

Please help.. my first time freezing cakes... can you tell me if it's best to level your cakes before you freeze them or wait until afterwards.

I have a huge order for this weekend and work a full time... so there's not time this week to bake cakes 2 days before.. what's the best way to freeze?

Also, I want to do 2 FBCTs.. my question is.. if I do them tonight will they keep in the freezer until Saturday? I know is sounds like an odd question but just want to make sure.

You can freeze your FBCT for quite a while.
at least a week before.
Once it has frozen place a piece of parchment over it to keep if from picking up other smells from the freezer.
Your cakes too will freeze well. I usually wrap them in syran wrap and aluminum foil after they have cooled from the oven. Just make sure they are cooled well.

When you want to use them let them thaw wrapped for about 2 hours and then remove the wrap and level, fill and ice.
