We had a restaurant here called "Souper Salad" that was basically a soup and salad bar. They had desserts and one was gingerbread. It was not a cookie. It was baked in an 11x18 pan cake pan and was basically cake that was very soft and light. It was awesome and that was the reason I would go eat at this place.

Does anyone have a gingerbread cake recipe that sounds like this?
