Rolling Out Cookie Dough Question....

I've read on here in a few posts where folks said they roll out their cookie dough inbetween parchment paper pieces before cutting them out. What is the benefit of this procedure and what is the steps to this procedure? Do I need to flour the paper, does it slip and slide underneath the rolling pin, any help and direction would be greatly appreciated. Thank you very much.

I always roll my dough out between pieces of parchment. I never have to add additional flour and the pieces are easy to slide right onto a cookie sheet. As far as it slipping, well it does, and the my solution has been to rest part of the sheet over the edge of the counter and kind of lean forward while rolling out the dough to keep it in place. I also have a wooden form that I use that goes over the bottom sheet of parchment paper that allows me to roll the cookies out to a uniform thickness. This helps keep the parchment in place also.
