Buttermint Question

I have a potential customer who wants a cake but also wants someone to make buttermints for her. She is wanting a certain kind of buttermints she said they are the ones you roll out on marble and then cut. Does anyone here make these and if so would you be willing to provide me with the recipe and instructions for how to make them. Thanks so much!

This recipe is from"The Southern Living" cookbook... hope this helps


Mint Twists

2 cups sugar
1 cup water
¼ cup butter or margarine
1/8 teaspoon oil of peppermint
4 drops of desired food coloring

combine sugar and water in large saucepan; bring to a boil and add better. Cook over low heat, stirring gently, until sugar dissolves. Cover and cook over medium heat 2 to 3 minutes to wash down sugar crystals from sides of the pan. Uncover and cook to hard ball stage (260 degrees). Remove from heat and immediately pour onto a buttered marble slab.

Sprinkle oil of peppermint and food coloring over surface of hot syrup; let rest 3 minutes until edges begin to set. Begin scraping syrup with metal spatula into a central mass. Continue until color is evenly distributed.

Pull mixture with fingertips, allowing a spread of about 15 inches between hands; then fold mixture in half. Repeat pulling and folding until consistency of mixture changes from sticky to elastic. Begin twisting while folding and pulling. Continue until ridges on twist begin to hold their shape. This takes about 5 to 10 minutes (depending on weather).
Shape mint mixture into 1 inch thick rope. Use kitchen shears, cut rope in 1inch segments. Place on wax paper to cool, cover with a towel. Let mints sit 8 hours or until they become creamy..store in airtight containermakes about 4 dozen.

You can divide the mixture in half and make 2 colors of mints; the resting time will be shortened to about 1 minute. You may need help to knead second color so that it doesnt harden too quickly

(do not double recipeif more mints are needed..make 2 batches)
