OK, so I'm having trouble with this whole storing the cake - making it ahead of time thing. From what I understand you can freeze a cake, and also refrigerate a cake - but it could damage the type of icing you use.

So to avoid that, how do you make a filling that doesen't need to be refrigerated then??

I'm making a fondant covered cake and I'm too nervous to put it in the fridge but can't decorate it the day of the shower because I'm also attendnig the shower!!!!

UGH!! How confusing is all of this!?!?

Any fruit filling does not need refrigeration. Nor do any of the fillings you can get in the 2-lb. tubes in cake shops.

Mmmmmm, let's see, what else is there?

The only thing that hasn't been mentioned is maybe - Nutella. That's if you like hazelnut and chocolate.

Homemade caramel filling
