Hi.

I have the opportunity to provide cakes and cookies for someone that has a great marketing idea for Valentine's Day.

The only problem is that I don't know how to price this order so we BOTH make money.

He is asking for 6" and 8" heart shaped cakes. I have an opportunity to purchase these cakes but they will be only rounds, which is ok...I guess I can work around them. Put the heart shaped logo on the cakes and fill the top V with some royal icing flower that I can purchase.

I have emailed the man to ask him if I am going to provide, packaging, storage and shipping.

Since I am only a one person operation I will also need a few extra tables and Part Time help. He had offered to get me whatever I needed...but, I haven't really sat down with him to let him know what I need.

The only thing that I directed him to was the edible printer manufacturer because he was unhappy with the color red in the logo...it wasn't red enough. What we found out is that because of goverment regulations, the Dyes that made a true red have been banned, so the logo looks a little murky or brownish.

So, I've emailed him the list of questions that I had....in the mean time...

One of my CC friends hooked me up with someone that does this as a business. I can get the cookies already done up! which is great, but I want her to make some money on this too...so now...I will be the middle man and I don't know how much to charge for that.

She also makes these wonderful little cakes, they look like they have poured chocolate over them, she does the little mini tiers...they are not the size I need but they come packaged and finished. She will be sending me a sample.

I don' t know if I should just push these products on to my client, and just add a pecentage for handling or do all the work myself and keep all the money for myself.

Right now things are a little slow, but I'm afraid that since I do everything myself that I will be overworking myself and not be able to be true to what I do.

SO...I need some help......how much % would you add if you were the middle man

would you do the work yourself and hope for the best...

or...would you farm out the work...

talk him into the extra equipment and the extra help...


Oh yeah...my space is very tiny...about 300 square ft.

holy moly....sounds like this guy wants ALOT of cakes!

i'm confused...are you going to have to do the work now, or around valentines day?

if it was doing the work now...nov. and dec. are typically kinda slow months for cake (for me)....
depending on how many he wanted i might think of doing it myself and keeping all the money.

but

if it were for valentines day....i'd think that would be a pretty busy time for you for your own cakes.

no believe it or not you were a great help.

the thing is I don't know how he's going to order them....as needed or by the dozen.

and that is my problem, I dont' have storage space as I only have 1 double door freezer and 1, one door fridge that keeps my milk, eggs, butter and assorted things.

I use my freezer ..one side is storing the cake balls that I'm going to be using for the BOOK LAUNCH party at the erotic museum next week...and the ohter side I throw my cakes in there after I ice them so the icing is firm to the touch when I lay the fondant down...it's less of a mess that way.

So, on Valentines day...storage space is going to be at a premium!

one time a caterer came in and wanted a quote for 100 full sheets.

i thought about it...and decided not to even bid...cause i thought....dang after trying to bake decorate and deliver 100 full sheets in a couple days i'd be so dang tired and sick of making cake i'd wanna kill myself....i guess i like the variety of making different cakes.

so...is your shop anywhere near where the miami ink boys are?

i love that show....i guess since they are such great artists and in a weird way...thier business seems to be alot like ours....with all the crazy customers...

This job just requires me to do some 6" and 8" heart cakes and throw his edible image on top. I can bake on a Monday and throw in the freezer and decorate as needed, the only thing is that I don't use American buttercream and I'd have to buy the 50 pound box of sweetex to make it. Buuut, then I'd have to know if he wants me to pack and ship his product also..then I can't because I don't have the space. and I don't know if it's just a one time thing for Valentines Day.

Yes, actually I'm pretty close to the Miami Ink Shop in South Beach...I was actually thinking of bringing them a cake..lol

RisqueBusiness - I was curious about what product was used to create the logo which had the red that came out too brown? Was it a SweetArt printer? I often think about getting one of those, but I've heard their reds aren't the best. Is this what you were finding, too, so you suggested that he use edible sheets instead?

No red will be a true red anymore , as I posted, the dyes that were used to make a true, true red have been ban from use by the goverment..

That's why we are always complaining that we can't get red..and posting how to get a red icing!

that's why the red in all the edible printers will always have a hint of another color.

And yes...we were using edible sheets

If you find out this is a one time deal, could you look into renting a freezer to store? That way maybe you could do the work yourself and keep all the money. Just a thought.
