Just would like to hear from any NC home bakers that are legal.
I have heard that it is not too bad to become legal here in NC.

I would really love to take that step to becoming legal, and wanted to hear from anyone here in NC.

I am just a big procrastinator. Really worried that I will fail trying, or that it will be even harder than expected.

Do you have any advice as far as, should I set up everything in my kitchen the I would want it to be, and then have them come out and tell me if I need to make changes.

I just hate to get started or get things in place, and then there be some expensive change I would have to make.

Some people say you have to have another sink, but I think I have heard that you don't for NC.

This is something I would'nt won't to have to add. Thats why I hate to spend money to get legal, and then they come out and hit me with expensive changes I would have to make.

I know I can call the dept. of ag. which I have alredy done, but the lady I spoke with could'nt actually tell me everything required for a home bakery. The info she sent me has a mans name that would be the one that inspects in my area. I havent spoken to him yet.

Just would like to hear from someone who has actually done this.

I would suggest talking with the person that you have a business card for first. He can give you suggestions and guidance for setting up your home-based business and what is expected of you.

Definitely call the person you have the info for, but I have found out a few things as well. You do not have to have an extra sink. The lady I talked to gave me these pointers:

1. Make sure everything is labeled
2. Keep your family food and supplies separate from your cake ingredients/pans/supplies, etc.
3. No infestation (ants, dogs, cats, anything)
4. No uncovered lightbulbs....not even chandelier type fixtures in any area where you work on the cakes or let them cool
5. No nick-nacks, objects on the walls, counters, top of fridge or cabinets
6. Neighborhood association has to be ok with in-home businesses

That's about all I can think of for now. I hope this helps. The packet they send out to you is very long, very small print, and very little of it has to do with in-home bakers.

Does anyone know about well water? I thought I had read somewhere that if your source of water was a well you had to have it tested every year. Does anyone know anything about that?

Yes, you do have to have well water tested for bacteria every year
