Cake Like Cornbread!

Well, it sounded like a good idea.
Homemade Bonnie Butter Cake for cupcakes, fill with twinkie filling, top with chocolate/Peanut butter frosting.
My DIL eats one and says it tastes like really good cornbread.
I said "gimme one" and sure enough it does. icon_confused.gif
Also, the twinkie filling turned to "soup" and really runny.
Guess it was a bad idea. thumbsdown.gif

Hey, we all have those days. I tried Amaretto in my chocolate cake and I didn't like the flavor at all - especially since I was experimenting with coconut icing on the same cake. Ick. But the neighbors ate it, liked it, then came and requested a larger one for Halloween. Go figure.

By the way, we make cornbread that's half cornbread/half cake, so we probably would have liked your cake icon_smile.gif

I made homemade icecream once with Amerretto.
I also thought it was gross.
Don't know why everyone else liked it.
It's just about the only icecream I ever hated.
Maybe it should be the only flavor I keep in my house. icon_cool.gif

How do you make your half cornbread/cake? I love cornbread pretty much in any form and I am always looking for new ways to experiment.

I love Boston Market's cornbread, so here's what we do...
1/3 box yellow cake mix to 2 boxes Jiffy cornbread mix - add same ingredients you would to cake mix and Jiffy Mix - I think it's one egg, about a tbsp oil, and 1/3 c water for the cake mix (whatever 1/3 of the added ing. would be) and whatever the Jiffy boxes call for - mix it all together and bake about 15 min in a 350-375 oven. My favorite cornbread icon_smile.gif!

I don't know if you make scratch cakes a lot but they have a different texture than mix cakes. I compared it to corn bread texture too.

I made scott W.s scratch lemon cake and while after I got used to the texture I loved it, it was strange at first. : )
