Wheat Gluten Free Cake & Icing Recipe - Anyone Have One?

I have a dear friend who cannot eat anything with wheat gluten in it. Does anyone have a descent recipe or know of a website that might have a recipe for a cake and icing that does not include wheat gluten? I would GREATLY appreciate your suggestions.

I make chocolate and yellow gluten-free cakes. It takes some doing and very special ingredients. Most call for xanthum gum. I don't use it. It's just an expensive thickener and believe me, gluten-free does not need to be any thicker! icon_smile.gif

You can google "celiac" and it will lead you to quite a few sites that have recipes. celiac.com has the most that I have found.

I have also discovered from some of my customers that SOMETIMES they have dairy intolerance as well. Check to be sure.

I don't have my recipe make-overs on the computer yet, but I can private message you the ones I have.

That website sells gluten free mix and gluten free icing mix. icon_smile.gif I haven't tried either yet but if I ever have someone ask for a cake w/out nuts, dairy, or wheat - I'll have to try one. You can also find these at some grocery stores, Rainbow Blossom chains, Whole Foods, and Wild Oats. Let me know if you use one and how it works out for you! They make a yellow and a chocolate cake and a chocolate icing and a vanilla icing.

If you're one of those "must be from scratch" bakers though, sorry can't help there! You may want to look in the recipes section of this site - there's probably a gluten free section or a diabetic section or something that might meet your needs.

celiac.com has recipes.....I make wheat free cakes for Celiacs as well.

Also go to www.baking911.com - the forum has a special diets area where people have posted wheat free cake recipes.

There is also a book by Analise Roberts (I think that's her name.....) anyway she too has all wheat free recipes and was in Gourmet magazine (you can also search teh Epicurious website for her recipes there)

There are many companies in the states that offer gluten free/wheat free products including cake mixes. They are not widely available here in Canada, but I bake from scratch anyway.
You will need to have a gluten free baking powder (Epicure selections carries one) separate things like baking soda, I also use the xanthum gum. Nielsen- Massey vanilla is gluten free so that's a safe vanilla.
Mostly you will use brown rice flour as your flour base. Again go to Epicurious.com to find Analise's all purpose flour mix if you want to use it as a replacement in your regular cake recipe.

Oh I forgot to add...you won't be able to grease and flour your pans as you do regularily....just use parchment completely with some oil. You should sterilize your baking tools and explain to them as well that you will do all you can to keep wheat away from their cake, BUT you are not a wheat free establishment/home.
