I've been trying to come up with a way to use up the large pieces of cake that I have left over from some of the 3D cake projects I've had lately, and I came up with this. I bought some clear 9 oz. plastic cups and some frozen mixed (whole) berries to make individual trifles with. Here's the layers I used, from the bottom to the top:
1: A few small pieces (pieces cut about 1/2"x1/2") of cake
2: Whipped cream
3: A couple more pieces of cake
4: 2 Spoonfuls of mixed berries
5: A healthy dollop of bavarian creme
6: More cake pieces
7: Whipped cream again
8: 3 Slices of strawberry, fanned to look pretty
9: Rainbow sprinkles
All together, this used less cake than a cupcake would provide. It looks GORGEOUS, and tastes even better. And, I get to use up cake scraps! My customers weren't that crazy about cake balls, so this will hopefully use up some otherwise wasted product.

I was thinking that for chocolate cake scraps I'd do bananas and strawberries, and maybe some chocolate mousse instead of the bavarian creme. You're right Kazoot, the flavor combinations are endless, especially depending on what fruit is in season. I'm getting hungry just thinking about it! LOL
OK - I'm drooling over this and wish I had some right now.
How about Pina Colada with pineapple tidbits, white cake and bavarian, or Pistachio Pudding with white cake and pineapple tidbits, and on, and on ......
So, how much are you charging for this personal little dessert?
It's a great use for a sunken cake or a cake that breaks. No waste! My family loves my "mistakes"

I'm charging $3 for it, served in a 9 oz clear cup. I wish I lived in a little closer to Chicago, it's pretty enough to draw a higher price, but not in my town. Oh well, $3 is still a decent price for what they're getting.
I love to do triffles with cake scraps. I also make suzy-q's with cake scraps. I like to cut them out fill with buttercream and cover with ganache. mmmmm, they are good--
Sounds delightful!! I love keeping scraps for last minute desserts for work, church or whatever. I do the pudding, choco. shavings, nuts, whip but have never tried fruit. I also love the individual idea. Thanks

Try this recipe from allrecipes. You can use any type of fresh/froozen fruit that you wish. I just made it again for a potluck & used fresh strawberries & cheesecake pudding. You can make it as light or fattening as you wish. Very easy & always rave reviews.

That is a great idea!! I know another one too -- in one of her books, Julia Child actually used 3 Cups of cake scraps as an ingredient to (guess what) make another cake!!! Cool, huh? Such great ideas!!
Sounds like another great idea to me. I have scraps left from 2 wedding cakes. I could take it all to work in containers and put it together there. Thanks for sharing.
I am looking for a recipe that uses leftover bakery items like (cake) making brownies. It was in a recipe book in a local grocery store. I know you put so many pounds of baked goods, Chocolate, Eggs etc. I used to have it but never imagined I would actually be in a place in my live that I could use it. So of course I can't find it.
