This is a quite famous and well liked recipe.

This is one of my favorite things to make.... it's super moist!!! I got it from the African American Heritage Cookbook from Tuskegee University.
3c ap flour
2c sugar
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
1/4 tsp ground nutmeg
2c coarsely grated carrots
1 1/3 c oil
2 eggs, beaten
1c chopped pecans - optional
1 cup undrained crushed pineapple (save remaining juice for frosting)
1 tsp van extract
1 tsp lemon extract
preheat oven at 350
combine first 6 ingredients in mixing bowl
add carrots, oil, and eggs and beat until well mixed
add remaining ingredients and stir until well mixed, do not beat or overstir
makes 2 loaf pans, one bundt pan, or 2 8" layers
bake approx one hour, time will vary, just check it
Cream cheese frosting:
4 oz. cream cheese, softened
1/4 c butter
2c confectioners sugar
2 to 3 tbsp pineapple juice from can
Cream cheese and butter together, add sugar and blend until smooth.
Slowly add juice until it can be drizzled across cake.
For thicker frosting, use less juice to spread.
