Monogram Mold Problem

I'm using the medium sized monogram mold from ck to make the letter N with chocolate. I am having a horrible time when taking the chocolate out of the mold. They will not come out with out cracking. I am putting them in the freezer for approx 1 to 5 min for choc to harden and they just don't fall out of the mold. Does anyone have any hints on using this mold? I have to make 150 letter N's and I was only able to make 10 last night. Oh I used candy color in my chocolate. Does this make a difference when molding????

I also use candy color to tint chocolate and have used that monogram mold from CK. When chilling the mold, wait until it looks cloudy on the underside before unmolding. I turn the mold over on a kitchentowel and gently tap the underside. The kitchentowel helps minimize breakage.

Did you put your mold in the freezer? How long? Could I be keeping the mold in the freezer to long??? Thanks for your help!!

I placed mine in the refrigerator, not the freezer, for a couple of minutes. It's just enough until the mold and chocolate gets cold. You will the underside get cloudy - that's my indicator for unmolding.

I always leave mine in the refrigerator for 10 or 20 minutes. It's probably longer than it needs, but it doesn't harm it. It would only be harmful if I stored the chocolate there, but putting it for that bit of time doesn't hurt anything.

If you're still having issues after leaving them in the refrigerator longer, I would suggest maybe a very light spraying of vegetable spray, or something to that effect. Not a lot like you would for a pan, but just a fine mist.

Thanks, for your suggestion. I will try the refrigerator instead of the freezer the next time I have to make only a few. I needed to make 200 of the letter"N" and between not being able to get them out of the mold and the time they needed to be in the freezer, it would have taken me a months to make these. So, I ended up making the letters out of royal icing.

Where can I get the molds from CK? They only sell wholesale; I have couple of cakes and some minicakes to make with monograms on top and that sure would help. Does anybody have any idea where to get them? By the way, LoraMI, good luck with your monograms. After those helpful tips I'm sure you'll be able to finish making them without any problems. icon_smile.gif
