Hi All,

Does anyone have a moist, dense and yummy coconut cake recipe? I can't seem to find coconut cake box mix here, hence, I guess it has to be from scratch.

I do get yellow, carrot, cherry chip, chocolate and lemon cake mix boxes though...

I've not tried this, but I'm going to someday. Make a scratch white cake recipe and use coconut milk for the liquid. Or a pound cake if you want it dense. I've been dying to try this and see how it comes out....

Betty Crocker makes a coconut cake mix, and I recently found a pina colad rum recipe in the Cake Mix Doctor Book, which uses yellow cake and cream of coconut - very yummy and not for the calorie shy!

I have a great scratch recipe, but it sounds like you would prefer a mix- I'm sure you could doctor one up with no problem (coconut milk is a good place to start). If you want to try scratch though just let me know and I'd be happy to post my recipe for you icon_biggrin.gif

I use the DH coconut supreme and add a box of coconut cream instant pudding and replace some of the liquid with coconut cream (Coco Lopez) and add 1 extra egg to the mix. I put the coconut filling and the coconut buttercream frosting I use with it in the recipes.

i use my regular yellow cake recipe but use the coconut milk instead of regular milk. I am in Jamaica and any and every brand of coconut milk is available to me but i use a brand in the tin from a company called grace kennedy. i dont know how many of you can get to a jamaican store to look for it. i dont see why any brand wouldnt work though. the lady i did it for told me that it was great. icon_smile.gif hope you have the same luck.

After searching many recipes I decided on this one:

It turned out delish! I filled it with bavarian cream and toasted some coconut to stick on the frosting.

here is one I have on file:


Found this in a Mailbox News from 2000 by Tamara Robison Dallas, TX

1 box Duncan Hines yellow cake mix
1 cup buttermilk
1 tsp. pure vanilla
1 stick butter
1 tsp. coconut extract
1 tsp. butter extract
1 Tbsp. sour cream
½ bag coconut
½ bag pecans (according to taste)
4 eggs
1/3 cup heavy whipping cream
Cake topping (recipe below)
Cream Cheese Frosting (recipe below)


Heat oven to 325°; flour or spray pans of your choosing (at the end Tamara tell what pans she used).

Mix yellow cake mix, eggs and buttermilk. Beat for a minute, and then gradually add vanilla, butter, all extracts and cream.

Add coconut and pecans according to taste. Pour cake mixture into greased cake pans of selected sizes.

Bake for 35 minutes or until golden or top springs back when lightly touched.

Add cake toppings at once


Cake Topping:

1 cup Amaretto Liqueur
1 Tbsp. butter

Heat Amaretto and butter until fully heated. Pour mixture on top of cakes as SOON as they are removed from oven to added flavor. Fully cool cakes before adding frosting. Once cakes are cooled mixing the frosting is a breeze.


Cream Cheese Frosting:

2 pkg. cream cheese (8oz.)
½ stick butter
1 bag powder sugar
1 tsp. vanilla
1 Tbsp. milk


Mix together.

Thanks a lot for all the recipes and suggestions. You guys are just so helpful! I am going to try some of them and will let you know.

Amber, I would love to have your scratch recipe too. Leana, your recipe sounds so yummy! Am definitely going to try that one.

I don't get coconut cake mix here in Malaysia, hence, I will have to make from scratch or doctor up a yellow cake mix.

Momlitr, the pina colada rum cake sounds good and I do get yellow cake mix here. Will you be able to send me the recipe?
