Hi CC.

just a question. can I use an instant pudding in the cake mix extender recipe even if it doesnt really call for it? Need to do one this evening and was just wondering. will it change the outcome or spoil the cake.

Help CC.

I use 1 package of instant pudding mix everytime I make the cake mix extender and it turns out AWESOME! The cake mix extender is my favorite recipe!

do you substitute the pudding for something else? or just add it to the extender recipe? Thanks,

I've done it with and without the instant pudding. Without, it will still work but the cake isn't as dense... to me it's more moist with the pudding added; however you can do it without also as most cake mixes have pudding already added to the mix.

Just add it to the mix, it does not replace anything.

I just use what flavor cake I am making. The last cake I made was the Butter white so I added french vanilla pudding mix. I usually make French Vanilla cake so I always add vanilla pudding.

From what I understand, vanilla is a flavor enhancer and will enhance any other flavor. So when using the pudding, you could use vanilla to say (for instance) the flavor of a chocolate cake or use a chocolate pudding to give it a chocolate chocolate flavor. Although, I've never done this myself so if someone more experienced could elaborate.......

If you add the pudding and the extender to a cake mix, is it best to only do it with cake mixes that don't have pudding in it, like DH, or could you use it with any cake mix, like BC and Pillsbury?

I use Betty Crocker cake mix and even though it already has pudding in the mix, I still has a small box of instant pudding...it makes it that much better! icon_lol.gif

How much extra volume does the extender add to the cake mix? If a regualr cake mix yields 4 1/2 cups of batter, how much does the mix plus extender yield??

I am not exactly sure but I just made the cake mix extender the other day with Betty Crocker Butter White with one package of vanilla pudding added and it made close to 8 cups. I filled my 13x9 pan with just over 7 cups and had to throw the rest of the batter out. Did not measure but I would guess it was about 1 cup left over. I do know for sure that when I used 2 cake mixes with 1 recipe extender it made exactly 14 cups, the exact amount I need for my 12x18 sheet pan!

Perfect - thanks! Now I can use just 1 cake mix for my 3D car pan and the extender will fill in the rest. icon_smile.gif

Also, do you use sour cream or the yogurt in the extender recipe? Anyone have a preference?

I use sour cream because that is always what I have on hand.
