Pina Colada Filling Recipe Needed

Hi! I'm making a cake for a luau (party crowd) and want to do Pina colada frosting/filling with real rum but can't find a good recipe. Does anyone have any suggestions?

How about making a white chocolate ganache, adding a little coconut to it and some Malibu rum. Do you get that in the States? It's coconut flavoured rum. I'd use one of the ganache recipes from CC and whip it up when it was cool.

I was looking on google and just thought that you could do a whipped icing thing and add some pineapple juice,coconut and rum flavoring. It might work better with a custard filling and just add the flavorings to that. you might have to see what texture works better. I'm not really sure of a recipe, but I think it would work

I made a pina colada cake using a coconut cake mix and a pinapple cake mix. Duncan Hines makes these mixes and it was really good. I used cream cheese icing to fill and frost mine. I am wondering if somehow you could incorporated the rum somehow with this icing. You might be able to flavor it with some pineapple extract as well.

I just know the cream cheese icing complimented this cake really well. icon_smile.gif

oh my gosh,I am doing a luau cake in a couple weeks too,and I also want a pina colada flavor.all I found was a pina colada cake recipe with crushed pineapple in it and coconut extract.mind you it's on my fridge but I didn't attempt it yet.I have a cocunut cream pound cake from scratch,that I have frozen until the occasion.I think I'll do the one I mentioned to go with it.fillings I don't know,so here's a BUMP icon_biggrin.gif

Yes, we get Malibu Rum here (it's one of my favorites!) and that's a great suggestion. I'll try it for myself icon_smile.gif. But have to use something without coconut for this customer.

Traci, we're on the same page becuz I was thinking about the cream cheese combo too, but don't have a recipe that incorporates the rum. Do ya'll have any idea what kind/how much rum to use?

Maybe we should have a taste testing party!! icon_wink.gificon_biggrin.gif

The hawaiian haupia Coconut filling is the best for a hawaiian theme and tatse somewhat similar to pina colada. you can till incoorporate a little malibu rum in it. YUMMY!!!! had it at a party and had to ask about it and how it was made . thats how you learn right icon_biggrin.gif
