My daughter likes the Pina Colada Cake I make using the frozen Bacardi Frozen concentrate. I think the cake lacks flavor, but she likes it. While on vacation this past week I found some T.G.I.F. Pina Colada mix, where you just add ice and Rum. I bought some to replace the liquid in my cake recipe. I was also thinking about using it for the liquid in ButterCream icing. What do you think about that? I basically want to make sure the icing still crusts.

I was hoping to find some Lorann Oils but I didn't have any luck. I don't have any cake supply stores in my area and I have to buy most everything online. I do have a Michael's about 50 miles away, but they don't carry everything I want. I got my Magic Line 9X13 (from Cakes By Sam) pan just days before we left so I am anxious to use it. I also received my order of Americolors from C.C.

I made this cake on Monday and my daughter loves this cake. This cake is so full of flavor, I just wish I would have bought the Strawberry Daquiri mix also. I used the Pina Colada mix in the cake to replace the liquid and I also used it in the BC icing, but because it is so thick I still added water to thin icing.

I have used the frozen Bacardi Pina Colada (frozen) mix before but T.G.I. Friday's mix makes a better flavored cake in my opinion.

I also made a pineapple filling to put in between the layers.

That cake sounds really good...I'll hvae to try it. All the liquor stores by my house carry the TGIF mixes, as well as the local Kroger and Walmart, so you may still be able to get the Strawberry Daquiri mix.

Did you just replace the water with the mix?

I used the White Almond Sour Cream cake recipe and yes, I substituted the Pina Colada for the water. By the way, I never use water to begin with. I always use buttermilk or evaporated milk. I used 1 tsp of coconut extract and 1 tsp. of vanilla for the flavorings.

mendhigurl, if you try it let us know. My neighbor emailed me this morning telling me how much they liked it. My father in law also really liked but he is diabetic and the cake is too sweet for him. My neighbor said he didn't think it was too sweet though.
