Smoothing Buttercream Icing

Help!!! I thought I printed this topic but I guess I did not. I need a technique for smoothing buttercream icing. The one that I am thinking about is the one with Viva paper towels (I think). I seems like this is the one that everyone was raving over.

Hi lisa yes!! Viva paper towels are very good! that is what I use..
After the cake crusts... about 10-15 minutes after frosting, lay your paper towel on it and smooth with your hands..

In my Wilton classes the instructor told us to use parchment paper to smooth with. What are the differences in these 2 methods?

I've read where some use parchment paper too.. I'm not sure how that one works, but I know and have used the Viva.. that's the way I smooth all my cakes icon_smile.gif

I've tried both and I think the Viva paper towel way is better. The parchment paper method (with Wilton brand parchment) is the Wilton way so that's what the instructors are supposed to teach.

I have learned both ways of smoothing the cake, paper towel and parchment paper. I prefer the paper towels, they are more flexible and if you hit the cake with the edge of the paper towel, it doesn't hurt your frosting. If you should use parchment paper, the edge can sometimes leave a sharp line in the cake if you let it fall on the cake accidentally. Try to get the non-textured towels, unless you prefer a pattern in your frosting.

Well, I was so excited about the Viva towels, I went out and bought some! I tried to smooth a cake tonight and it worked out so great I could do cartwheels!!! I didn't even have to hot-knife my cake first! Whoo-hoo!!!
