I'm doing desserts for my stepson and nephew's high school graduation party on Wednesday. Neither of them are big cake fans, but both love brownies, so they requested "brownie cakes", brownies decorated like a cake. I'm also making a small 8 or 9 inch round yellow cake, just in case someone wants cake and not brownies. Anyway, I'm planning on making 2 9x13 batches and stacking them to get a better height with buttercream as a filling, then decorating. Has anyone ever done this? Any ideas on a good sturdy recipe or mix that won't crumble when I take it out of the pan? Any tips on icing so I won't have chocolate brownie crumbs all over the place?
