Hello to all,

Me and my mom are weightwatchers members, and have been doing great. Here's my challange...

I want to make a cake for Mother's Day, but have it be weightwatchers version. I have a bunch of other dessert recipies that are specifically from weightwatchers, but really want to do a cake for mothers day.

Any help, is greatly appriciated.

WW Chocolate Cake

Preparation Time: 15 min
Cooking Time: 25 min
Level of Difficulty: Easy

# 1 sprays cooking spray
# 1 3/4 cup all-purpose flour
# 1 1/4 cup packed light brown sugar
# 3/4 cup unsweetened cocoa, powder
# 1/2 cup sugar, granulated
# 1 1/2 tsp baking powder
# 1 1/2 tsp baking soda
# 1/4 tsp table salt
# 1 1/4 cup fat-free skim milk
# 3 large egg white(s)
# 2 Tbsp light butter, melted
# 1 1/2 tsp vanilla extract
# 1 cup water, boiling
# 1 Tbsp powdered sugar

# Preheat oven to 350ºF. Coat a 9 X 13-inch baking pan with cooking spray.

# In a large bowl, combine flour, brown sugar, cocoa powder, granulated sugar, baking powder, baking soda and salt; mix well with a fork to combine.

# In another large mixing bowl, combine milk, egg whites, melted butter and vanilla. Using an electric mixer, mix on low speed until blended; gradually beat in boiling water.

# Gradually add flour mixture to milk mixture and mix on low speed until blended. Pour batter into prepared pan and bake until a wooden toothpick inserted in center comes out clean, about 25 minutes. Cool cake in pan, on a wire rack.

# Sift powdered sugar over cooled cake before cutting into 12 pieces. Yields 1 piece per serving.


Diet Coke Cake- 24 servings

2 points per serving


1 BOX CAKE MIX
1 CAN DIET COKE
1 3 OZ. PACKAGE INSTANT PUDDING
2 C. SKIM MILK
1 8 OZ. FAT-FREE WHIPPED TOPPING

Instructions

MIX ANY FLAVOR CAKE MIX WITH 1 CAN DIET COKE. BAKE IN A GREASED/FLOURED 9X13" PAN PER DIRECTIONS ON BOX. AFTER CAKE COOLS, CUT INTO 1" CUBES (WILL CRUMBLE AS CUTTING). PREPARE PUDDING MIX AS DIRECTED WITH MILK.THEN TAKE ABOUT 1/3 OF CAKE, LAYER IN "TRUFFLE" DISH, THEN 1/3 OF PREPARED PUDDING, THEN 1/3 WHIPPED TOPPING. REPEAT 2 MORE TIMES UNTIL ALL INGREDIENTS ARE GONE. REFRIGERATE. YUMMY!
