Not Sure How To Go About This

I'm making a patriotic cake today for a Welcome Home Sgt. dinner for tomorrow (Sunday) at 5pm. It's going to be white cake (it's frozen in my freezer already), BC icing with raspberry filling and a draped fondant flag over it. Today/tonight will be the only time I'll have to make this cake. I'm worried about the filling not being refrigerated or the fondant in the fridge!

I can go ahead and fill/ice the cake today and refrigerate it but I have to put the draped flag on sometime before I go to bed tonight which means the cake won't be refrigerated over night and all day tomorrow till most likely after 8pm. (That's easily 18-20 hours!!! icon_surprised.gif )

Do you think there is any danger of the filling going bad if it's out all night and all day tomorrow? (It's Solo brand raspberry cake & Pastry Filling which says to refrigerate after opening). Or if I put it in the refrigerator with the fondant on it, will the fondant get funky on me? (I'm resorting to using Wilton fondant>>>yuck<<< but not much choice now. The box says it can be frozen but I really don't want to freeze this cake after its done!!)

I'M NOT SURE WHAT TO DO!!!!!! icon_cry.gif ANY help would be GREATLY APPRECIATED!!!!!

Wish I could help you. I really don't have any idea. Is it possible you could just leave the flag off until you deliver tomorrow? Maybe you could do everything but that...they you could put it in the frig.

If you leave your cake out I would think the raspberry filling would be okay. I know that when my sis uses fondant to cover a cake she leaves it out without worry. I use water instead of milk in by buttercream so I can make cakes up and set them out easily until delivery/use. I just have them in boxes of cake containers. I thought I'd always heard that if you put a fondant covered cake in the frig it's make it sweat when it came to room temp. Not sure how this helps. LOL

I've used the strawberry filling in a wedding cake and the company said it would not need to be refrierated, they said it's like a whats in jelly doughnut. The fondant I don't know about. Marilyn

thanks y'all. I think I'll just take the chance and leave it out. I'm hoping with the BC sealing in the cake/filling, that it'll be ok. I'll cover it with some plastic wrap (and hope I don't mess up any icing!!!). I'm not covering the whole cake with fondant. The flag will just be draped to one side and some fondant accents at the top border area.


I know! I'll do what my signature says and pray!!! Then I won't have to worry right?!!!!

i don't think you'll have any problems with the filling at all. It is when you get into the creams and the fresh items in the filling that things start getting a little more complicated.

As for the fondant, i have refridgerated wilton fondant and had problems with it getting mushy on me. However with MMF i haven't had any problems at all-i just leave it loosly covered with some seran wrap, so the air can still flow around it.

I recently left a raspberry filled cake out for 2 days, and it was just fine.

I think you will be okay. The package says to refrigerate after opening, so you won't leave it the jar out on the shelf for weeks and still try to use it. Once the air hits the stuff in the jar it may start to go bad or grow mold over a period of time. At least this has been my experience with things that have to be refrigerated after opening.
