Ok I need help I was about to have a fit last night & thought my family was going to kill me because of how freaked out I got. I had to do a full sheet cake that had to be torted and filled. I did two half sheets. I was afraid about not cooking all the way through so I used the core. Maybe this is the source of all my probles. It was so untstable it just crumbled. I ended up having to redo it & still had the same issue. This time I was ready for it so I was able to repair it. Please Help icon_cry.gificon_cry.gificon_cry.gificon_cry.gificon_cry.gif

I've made the half sheet cakes quite a few times, and finally learned to cut the half sheet in half in order to stack it. It saves you the headache of worrying how to get it on the bottom layer. Either that or put the cake on a board covered in contact paper so it will slide off easily. Good luck!

Freeze your cake first!!! I promise you, this will help so much if you have an unstable cake. Take it out frozen, then stack it.

Marina, Are you meaning that you literally cut the cake in half fill it and then put it back together to make look like the 1/2 sheet??? I don't bake sheet cakes except for roulades. But why can't you just make 2 sheets and then fill the way you do (or I do) for a round layer cake without the headache of torting?

What did you use for a heating core.
I use two flower nails upside down.

Then I put each half sheet on a board and torte then freeze. I then flip the top onto another board and put back into freezer while I put the dam and filling on the bottom then I take the top layer out of freezer and place on top of bottom layer. I repeat with the second layer placing it beside the other half sheet on the full sheet board. Then I let it come to room temp before icing.
