While on vacation a few weeks ago, I purchased 30 lbs. of Pettinice from a cake supply store. I have only ever used SatinIce, but all those buckets wouldn't fit in my suitcase as well as the flat Pettinice. I need this for an upcoming wedding and was thrilled not to have to pay shipping.
Does anyone know if Pettinice can be put in the fridge? I know I read that SatinIce and FondX can. The "plan" is to use whipped ganache as filling so it can sit out a day. The bride actually requested chocolate pudding. But that will need to go in the fridge, so that's why I'm now planning to use ganache.
not a 100% sure but i thought ganache did not have to be refridgerated I have used it and left my cakes out.
Thanks, DeniseRoy, I think it's ok to leave ganache out 1 - 2 days. Pudding is my backup plan, so i was wondering about refrigerating Pettinice, in case it came to that. I just realized the wedding is on a Saturday and I work FT M-F!
I'm bumping in case anyone knows. I see it's made in New Zealand. Maybe some of our Australian decorators know?
I haven't used pettinice but, if the maker of pettinice has a website, you could try e-mailing them. I had e-mailed Satin Foods (maker of Satin Ice) back a while ago and they responded pretty quickly.

Glad I could help! Please post any response from pettinice. It's always good to know which brands can be refrigerated. I've tried Satin Ice with good results and have purchased Fondx but haven't used it yet.

Hi! My mother's day cake was covered in satin-ice but the small flowers were pettinice and I have used it before for small things. The pettinice seems to do just as well in the fridge as satin-ice. The only time I ever had a problem was when I put the fondant in the freezer. Then I had sweating problems. But the refrigerator works perfect every time!

I believe that Bakels is not able to be refrigerated. I used that exclusively up until I discovered FondX, which I know can be.
I was taught that you can't put fondant in the fridge and so I have never tried with the Bakels, that was the main reason I changed to FondX, so I could.
Try putting a small amount of the icing into the fridge and see what happens to it. It will probably go sticky.

Thank you beach! I am very grateful considering I drool over every cake in your gallery. As for the fondant ribbon...I love the way it looks but I'm not very happy with it otherwise. It can't be kept for very long. I purchased three rolls..the Happy Birthday, the butterfly and the classic and I kept them all rolled on their original rolls and in the plastic containers. But when you go to un-roll them, they break very easily. I have to patch a lot! But Cal-java has some wonderful things on their site! I bought ribbon roses, and fabric-looking gumpaste roses. Chocolate clay roses. I bought some great looking pillars too...and the white chocolate fondant is great!

Thank you for using Pettinice products. In response to your question, Pettinice should not be put in the refrigerator. It will get shiny or wet looking, and can also make flowers and other decorations made with Pettinice go flat.
