1/4 Sheet Cakes

This may sound stupid, but its bugging me. I have a cake to do this weekend and the customer wants a 1/4 sheet cake. She showed me the design and I'm fine with that. My question is last weekend I made another 1/4 sheet cake and I used a recipe from the cake doctor. The cake was delicious but when I took it out of the pan it seemed too small (I think I'm used to two layer 9 inch cakes). So I made another cake, and put it on top. But this is ALOT of cake and this cake I"m making this weekend is only supposed to feed 3 people.

My question is how does everyone make their 1/4 sheet cakes? Should I just add an extender to my box cake mix (instead of using the cake mix doctor receipe which only added buttermilk but was instead of the water) and fill my pan up more (I can't remember how full my pan was). Or is the only way to make a 1/4 sheet cake to make it with two cakes. I saw alot of cakes on here that looked very nice and I'm just wondering if that was two mixes or just one cake cut in half.
