I make a lot of cheesecakes and would really luv to know how to make them look like the ones in the www.elegantcheesecakes.com site. Thanx

I saw that site last week. And, I was stunned at how beautiful the cakes were. Beautiful! I would also like to know so I'm doing a small bump. LOL.

it's chocolate plastic or chocolate modelling paste (it's got a bunch of different names!)... chocolate melted with corn syrup... cooled then kneaded... it's similar to working with fondant or gumpaste. I can be made using candy melts, but the flavour is MUCH nicer using real chocolate.

Thanks MelC. The chocolate plastic or modeling paste recipes are EZ to come buy. The easiest would probably be www.baking911.com. I agree real choc. would be the best. But then does it have to be tempered?
