What is soaking syrup? What does it do for the cake? It sounds like it would make it soggy?

do you mean simple syrup? it's equal amounts of sugar and water (i.e. 1 cup:1cup) boiled then cooled to room temp and brushed on the tops of your cakes. it really just makes your cakes moist and yummy. since you are only brushing it on the tops of your cakes, it isnt enough to make your cake soggy icon_smile.gif HTH!

When I do regular cakes, the fluffy kind, I brush a little bit of the cooled syrup on top of the warm cake. It makes it moist and with a little kick (I add rum to mine). When I do a poundcake, I soak it in the syrup (about 2 laddle spoons) b/c the pound cake will absorb more syrup and because it is dense, the syrup won't make it soggy. Of course, you can't pour a quart of syrup over it then it will be soggy...you just use your judgement.

I've heard that soaking syrups are really cook for home made cakes as they tend to be dryer than box mixes. Has anyone used syrup on box mixes? How does it turn out?

I only bake from scracth. Haven't tried the syrop on a boxed cake but one of the yellow cakes I make is very much like the consistency of a boxed cake; for that one, I brush the cake on top with the syrup...about 3 - 4 tbs. total...depending on your taste.
