Freezing A Cake Questions

Ok, I have searched the forum, but I have not really seen much that can help me with this topic, so here goes ...
I am doing a graduation cake for my daughter's kindergarten class for next Friday; I can't spend all week baking cakes! So,
1. Can I bake the cakes this weekend, freeze until about thursday morning, and then decorate that night for Friday morning?
2. Also, do you torte and fill and then freeze?
3. Or do I just freeze out of the oven after it has cooled, and then torte and fill after pulling out of the freezer?
4. How do you guys wrap your cakes? I have read to "wrap it well", but what exactly does that mean to you? saran wrap and foil?

I just went through all of this last weekend.

Yes...you are fine to bake your cake this weekend and then decorate on Thursday.

I would only torte and freeze if you are using buttercream icing. If you are using a fruit filling...I would wait and torte it after you have taken it out of the freezer. Let it thaw for a while.

It is a good idea to brush your cake with apricot glaze before freezing. Boil 1 cup of apricot preseves and strain...add 1 cup water and bring back to a boil. Brush on your cake while the glaze is still hot. This will keep your cake very moist.

You want to wrap your cake well with several layers of saran wrap. You can also put your cake in an unscented trash bag before freezing. Also keep a box of baking soda in your freezer.

Leave your cake in its wrapper while it thaws. I use this method ALL of the time and it works great! icon_smile.gif
