Does anybody know how to have a cream cheese frosting without refridgeration? Or get at least the taste of it? My license doesn't allow my to have things refridgerated...but I really want to be able to get the carrot and cream cheese frosting style cake on my list of "can do"s....Help?? Please!!

the restaurant that i work in uses cream cheese icing on the cakes we display on the counter(one of which is a carrot). they are fine with out refridgeration. they are covered and are sometines there as long as a week. by then the cake is drying out and we get rid of them, but the icing is fine as long as it doesn't get hot and start to fall off the cake. and then we simply refridgerate long enough to fix the set and put them back out.

and at home i leave the cream cheese on the counter as long as a couple of days bafore i use it.

so i don't really know what you're liscense restraints are, but i think you should be fine.

good luck!!
kim--pm me if you need more info

I was going to suggest the flavoring. I've never tried it personally.
