Hello,
I'm planning to make my first wedding cake and need some reliable and yummy recipes. The bride wants one tier to be chocolate and the other tier to be almond flavored. Any ideas would be so appreciated. I'm really worried about running into baking or dried out cake issues. I really want to focus my time on the decorating instead of fixing the cakes. Thanks!

Hi there.

Call me crazy, but I always use the Duncan Hines mixes and doctor them up to flavor.

For the almond, I use the Lorann Goumet oils. The almond and amaretto are just wonderful. All you need is to add a 1/4 tsp per box mix. Bake and 325 for a little longer, take out when the tester still has a few crumbs on it and then wrap and freeze.

You can usually get these oils at any cake/candy supply store. I think that they are called candy oils. But the bakery I work in and My own cake business, they are awsome. My brides have always loved the flavors of my cakes.

Are you wanting to use a scratch or doctored mix?

I use scratch cakes and then use the simple syrup. For the almond you can add almond to the syrup and also brandy and or amaretto liquors to jazz them up. I will let the bride taste first to make sure she likes them with the liquors.

I use a white almond sourcream cake...always get rave reviews.

1 box cake mix
1 c. flour
1 c. sugar
3/4 t. salt
1 t. almond extract
1 t. clear vanilla extract
4 eggs
1 1/3 cup milk
2 T. Oil
1 c. sour cream

Mix dry first add wet. Pour in pan bake at 325 for abt 40 min. you should check at 30.

I usually add alittle amarreto on top of each layer before icing.
