i need help figuring this out:
1) i am making a wedding cake in may and it will be covered in buttercream (2 or 3 tiers). i live in houston and the wedding is in college station ( an hour and a half or two hours away). has anyone transported a cake this far and been successful?
2) if i make it ahead of time in houston, how many days will it be fresh for if i kept it in the refrigerator? i should not freeze it?
3) would it be a better idea to bake the cake and freeze it, make the frosting, and transport them unassembled to the site and finish it there?
i am confident in my baking, and assembling skills. i need help with my transportation coordination, AND how many days the cake will stay good for when you make it ahead of time.
Because it's a longer than "usual" way, if it's only 2 or 3 tiers, I would just put the cakes each in their own box, and set it up when you get there.
If you're going to deliver it the same day it's going to be eated, you can make it say, on a Thursday, ice it, decorate it Friday and deliver on Saturday. (That's my schedule, I don't refridgerate, but you can). It shouldn't be an issue. I always try and do as little as possible when delivering a cake. Less room for error!
1.) Just turn your a/c on well ahead of time before you even put your cake in the car AND will it take that long to get the cake there??? OR are you stating a time it will take traveling with the cake b/c you travel slower?
2.) I don't ever refrigerate or freeze mine, hopefully someone else can help you with this.
3.) I don't see anything wrong with you transporting the cake unassembled, but already decorated. You will have to add your bottom border at the site, though.

it usually takes an hour and a half to get there normally, it is country roads mostly, so it will most likely take two hours to get there with a cake.
is it possible to bake/ice the cake wednesday and refrigerate it until friday, and put it together saturday? will it still taste good/moist?
i am making it for a friends wedding (not the bride) and she is going to drive there on thursday (we decorate most everything together so she could assemble it), but the wedding isnt until saturday. and if its not going to be good, i will have to drive it myself later because she has to go early and i do not..
I would say that it would be fine refrigerated.
Are you using a crusting bc? I've heard that if it's iced in a crusting bc, then it can stay out for a couple of days.

At my local Cake supply store last Saturday, the owner and instructor of the class I was taking said that she always put a quilt down and tucked those frozen plastic ice for thermos coolers thingies around to keep the back of the trunk or van cooled. She said it works like a charm. I'm still learning so I've never done it myself but she's been baking wonderful cakes for years. Pam from Bama
