Fillings... Please Help!

I'm making a birthday cake for my co-worker -- who also bakes and decorates cakes. I want it to be fabulous, of course. I have the idea all sketched out, however I can't decide on a filling. Due to it being for work, the cake itself with be vanilla.

Any suggestions? Recipes?

I like to get the seedless jams and use those for fillings. Or you can either buy or make a curd - those are always good.

If you want it to be spetacular, I would do a mousse filling. There is a really good cookies & cream mousse filling recipe on this site. I have also made a delicious strawberry mousse filling before, with a yellow cake. I wish I could post the recipe for you but I lost all of my recipes. Maybe something like a white chocolate mousse would be good with a white cake. Good luck!
