Cake Keeps Falling Apart...

When you are making a double layer sheet cake or even if you torte one layer, how to get the 2nd layer on top of it without it falling apart. I have tried to use cake boards but I find it difficult to remove without breaking the cake or removing the filling. Someone please help. I have a big order coming up and I really need to figure this one out.

try freezing the second cake layer.....it makes it much easier to handle and position without problems.

How long should it stay in the freezer? The last cake I did I got realy lucky that I was able to put the cake that was falling apart on the bottom. No one could tell but there was a section of teh cake that was bowed in a little. Normally I try and stay away from making large sheet cakes but this is what they have requested.

I personaly like to use a the cardbord cake bords. I push the bord under the layer I want to remove, with my hand on the others side of cake to keep the cake form going the opposite direction icon_smile.gif!

I think it's just something you get good at as you do it!
I rember really messing up my cake layers when I was learning.

Try freezing the cake! Cut your layers, wrap it tightly, and put in freezer.
Once frozen take out with your filling-icing ready to go. and you can just pick up the frozen layers icon_smile.gif! This also works for me icon_smile.gif!

I usually have my cake on a board with 4 or 5 inches hanging off the side that is the first part to place down on the lower cake and just slide it off. If you are having trouble I say freeze at least the upper layer. I have to admitt that I had a disaster once and had to rebake the upper layer, it slid off the board as it should just alittle to soon and fast then landed on the floor. Oh well it happens.
