How Do I Bake A White Cake?

ok....I made a cake for my hubby's surprise birthday party this weekend. 1/2 chocolate fudge, the other 1/2 a "white" cake. The chocolate was great, but the white DH cake mix came out an off white, and I didn't do anything to really change the recipe. I added the cake extender recipe from here, but that shouldn't have yellowed the color, should it?

Any hints? I also just got my first wedding cake request. She wants a white cake.....so.....any ideas?

The only thing I can think of is if you used the whole egg instead of just the white of the egg, this would more than likely turned it an off white. Good luck on your wedding cakeicon_smile.gif

Also try using clear vanilla extract instead of regular vanilla. Either that or make vanilla sugar and bypass the extract all together. HTH!

Did you use classic white DH mix? I've used 3 whole eggs in them and still had them come out white...but I've never doctored up any of my mixes.

DH has a few different versions of white. Sometimes I have to check again and make sure I picked up the right one.

irisinbloom....Yep....sigh....I used the whole egg. Next time I'll use only the whites as you suggested. Thank you.

LilWashu... I haven't taken the plunge and made a scratch cake to decorate, but I will be using the clear vanilla, as you suggested. I have become a fan of that one ingredient as far as the white buttercream icing goes. Thank you, too.

mmdd....All I could find for a white mix was the DH White Cake Mix. I will have to look around for the different versions. Thank you for that heads up.

I may just have to start making white cakes from scratch. Are there any favorites as far as the recipe section here?

Hmmm...... in writing this reply, I realized that I added an off white vanilla pudding to the extender...and....that might have contributed bigtime, but in the future, I will be using ALL these hints, to make sure.
