I need help with getting crisp 90 degre angles on my cakes

Lots of practice!! I like to crumb coat my cakes and chill them before I put the final coat of icing on it. I think it helps to get the nice crisp edges.

When I ice a cake I use a bench scraper and that helps. I pile a ton of icing on the cake and use the bench scraper on the sides first. I then take a large angled spatula for the top. I hold the spatula at an angle and start from the outside edge and push the icing in toward the center.


It really comes down to lots of practice to get the technique that works for you. There is also a technique online called upside down technique that is supposed to give you sharp edges. You can probably do a search on this site and find it.

I'll post a picture of one of my cakes to show you the results I get with my technique.

LOTS of practice!!!!!! Good luck, it took me a while too!!!

You can never put too much icing on...actually it is better too, because you end up taking so much off.

My hubby can do it everytime and it makes me so MAD, lol. (yeah, I allow him in the kitchen, lol)
